- 1 cup diced green and red bell pepper.
- 1 cup diced peeled cucumber. I recommend English cucumber that
- comes wrapped in plastic or Persian cucumbers, both have better flavor
- than slicer cucumber)
- 1⁄2 cup minced fresh parsley.
- 1⁄3 cup green onion.
DRESSING:
- 1⁄4 cup fresh lemon juice.
- 2 tablespoons water
- 1 tablespoon olive oil
