The Panasonic is an infrared oven. Infrared ovens use infrared light to cook compared to convection ovens which heat the air.
They can reheat up to 40% faster, but just a little faster in cooking time.. They don't require a warm-up time to cook and they cook from the surface as well as from the inside.
It has two elements a near infrared (NIR) and a far infrared.
The near infrared (NIR) element has a wavelength close to visible light 0.8 - 2.5 µm heats the interior.
The far infrared element is a longer wave length (100 - 25 µm) closer to microwave heats the surface.
Infrared like microwave results in a moist interior.
Convection ovens are better at browning and cook more evenly. See Infrared Oven VS Conventional Oven
